Guilt-Free “Ice Cream” Two Ways

It all starts with three of these beauties:

If you’re anything like me, you absolutely LOVE, LOVE, LOVE ice cream. I’m currently “working on my figure”, so ice cream has not been in the regular rotation of sweet treats. I still, however, get that craving for a cool and creamy snack and let me tell you, this Guilt-Free “Ice Cream” recipe is what helps me satisfy my sweet tooth while keeping it healthy.

The base of this recipe is simple: just frozen bananas. From there, the possibilities are endless. In the world of blogging and Pinterest, some refer to this as “Nice Cream”. To be quite honest, it is really a “nice” dessert. It’s vegan, dairy-free, and depending on what you add to it, it can be gluten-free, which is important in my household due to food allergies and intolerances.

I’ve chosen two ways to enjoy this treat:

Blueberry Banana

Chocolate Peanut Butter Banana

 

Step 1: Slice up 3 Bananas in half inch pieces

Step 2: Arrange the Banana slices in a single layer on a lined tray. I lined with parchment paper, since that’s what I had on hand. Makes it much easier to remove the bananas once frozen.

Step 4: Cover the tray and pop in the freezer for at least 1 hour or until frozen firm.

Step 4: Now it’s time to blend! This is where you can get creative and suite your own tastes.

Blueberry Banana

1.5 Cups frozen bananas, sliced

1 Cup fresh or frozen blueberries

Step 6: Pour into a freezer safe container and freeze until desired firmness.

Here’s the finished Blueberry Banana “Ice Cream”. I like mine like soft serve, but you can freeze for longer to get a firmer texture.

Chocolate Peanut Butter Banana

1.5 Cups frozen bananas, sliced

2 heaping spoonfuls Peanut Butter

2 Tablespoons Cocoa Powder

 

Of course I had to have my “taste tester” sample the goods! And by the looks of it, she approves!

If you’re wondering what type I blender I used, it’s the Ninja 1100. I used my food processor attachment and it worked great! It created a really smooth consistency on both flavors I tried out. It also has a blender attachment, which is great for smoothies!
